Easy Salmon Curry


1 tablespoon vegetable oil

2–3 tablespoons red curry paste

1 14 – ounce can coconut milk

1 tablespoon brown sugar

1 teaspoon fish sauce

4 kaffir lime leaves, thinly sliced

1 package Easy Salmon

½ cup sliced bamboo shoots

½ red bell pepper, thinly sliced

Thai basil leaves, for garnish


Heat oil in a saucepan over medium heat and cook curry paste for 1 minute. Add the coconut milk, brown sugar, fish sauce. Stir to dissolve the curry paste. Add the kaffir lime leaves and Easy Salmon, simmer, uncovered approximately 15 minutes. Add bamboo shoots and simmer about 10 more minutes. Ladle into a serving dish, garnish with basil leaves. Serve over Jasmine rice.
