Line-caught while they are storing up reserves and building fat before winter in the waters off Oregon and Washington, our albacore tuna is prized as a premium fish and is amazingly both rich and light at the same time.

Our albacore tuna medallions are cut from loins (not unlike a pork tenderloin) and then packaged in vacuum-sealed packs. You can wrap them in seaweed for sushi night or make a Hawaiian-style poke.

Albacore tuna is caught all over the world. But it is widely regarded among chefs that the line-caught albacore tuna caught off our Pacific Northwest Coast is the best tasting and most nutritious. Caught between June and October when the juvenile albacore are following feed about 50 to 250 miles off the coast to bulk up for winter, these tuna are gorging on nutrient dense prey, eating a quarter of their weight each day in anchovies and sardines. Their oil content gets up to nearly 21% and their fattiness makes them perfect for delectable sushi rolls and the very concentration of Omega-3 oils make them super good for your brain and heart.

Line-caught Pacific albacore is easy to prepare and leaves a velvety feel in the mouth. “Like butter,” report some of our customers.

    I’m always skeptical of buying tuna in my grocery store not knowing how fresh or where it’s from. I didn’t have to worry about the Alaska Gold brand. They are frozen in perfect portion sizes. I just thawed them in my fridge, put a nice pepper coating and flash fried them in some olive oil. Observed it over a wasabi mayo with a layer of pea shoots just like my favorite sushi restaurant. Awesome!

    Outstanding Albacore Medallions

    Years ago, when I lived in San Diego, I caught many albacore tuna. These mini fillets arrived in perfect shape and equal or exceed the flavor of those I brought home from the sport fishing boats. Make a simple marinade, soak then for 3 or 4 hours and pop them on the grill. Sear them for a couple of minutes on each side and they will melt in your mouth. Do NOT over cook. Enjoy!

    Amazing Albacore!

    I made the Tuna Poke last night using the sashimi albacore tuna medallions (recipe on this site)–it was incredible! It is hard to believe that we can get such amazing, fresh tasting fish to prepare such delicious dishes in our own kitchen! It never tastes this good and fresh from the grocery store or even from the local fish markets. I originally ordered the sampler pack which comes with some of this albacore, and, after my family and I salivated over the tuna poke, I immediately had to place another order for the tuna medallions. I am having some friends over for dinner next Saturday and I am hoping that it arrives in time so that I can prepare it. It is a dish that will really “wow” my guests!

    We love having these in our freezer! A snap to prepare and equally at home in a simple weeknight dinner or for an impressive dinner party! We often do a simple sear and serve with soy sauce and sliced avocado.
