Here’s how to prepare these Dungeness crab custers:
Thaw crab in the refrigerator overnight. Make a broth with water, white wine, half a lemon, herbs, and Old Bay seasoning. Use a steaming basket. Cover the pot and steam the crab for 4-5 minutes or until crab shells turn bright orange. Use a mallet or a wooden spoon to crack open the legs. Use the leftover shells for crab stock. Each box contains 4.5 pounds of Dungeness Crab clusters. Clusters will vary in size (0.5-1.5 pounds each) and will consist of legs and knuckles on which you will find the most delectable meat. Each 4.5-pound box should contain 3-4 larger, shoulder clusters as well as other, smaller pieces. Each 4.5-pound box feeds 4-6 people.
